Cooking Skills

My cooking skills were somewhat limited too. as I told someone on Facebook the other day, my culinary talents ranged from grilled cheese sandwiches and tomato soup, to peanut butter and dill pickle sandwiches.

In short order, I've been tackling things I never dreamed of. I even have a folder of recipes I've pulled off the Intertubes.

And, best of all, I've been using the sh*t out of our new Instant Pot Pressure Cooker. What a tool! That allows me to do and experiment with a whole variety of stuff that I simply wouldn't have the time or ability to tackle otherwise.

I've even gone to the extreme of getting a new stainless steel inner pot for the cooker, along with a glass lid for when I'm sauteing stuff.

Speaking of experimenting, today, I went to Roshni's Market and purchased most of the seasonings and stuff to begin making some Indian food (I wouldn't call it cuisine yet - let's see how badly I mangle it first). I think there might be a chicken vindaloo in the not too distant future.

I have ventured into Asian cooking a bit. The other night I made a dish, Beef Lo Mien. Turns out there is enough for an army - well, at least enough for us to dine adequately for about three or four meals. And it was tasty too.

Breakfasts have changed a bit. I've done eggs in several ways over the years. But, for the first time, I've made pancakes from scratch. The first batch, tasted ok, but the consistency just wasn't light and fluffy. We decided it was because my baking powder was several years old. I bought some new, and tried again last weekend. Wow! What a difference. No more packaged pancake mix for me. Scratch is the way to go!
